Batches

A failed check reaches backwards

The detector passed at 09:30 and failed at 10:30, so everything made in between is held — not because something was found, but because nothing proves it isn't there. The check interval decides the size of the recall the plant is willing to have.

  • Held batches carry the reason and where they physically are
  • A missed chill limit is a hold with no release button
  • A cook under the recipe's limit is held — rework, never release

One row sets three controls

A recipe sets the cook limit, the chill window and the label sleeve the packer must confirm — all at once. Nobody types 75 into a phone, so nobody can type 65.

An allergen changeover blocks the line

Strip, wash and rinse, rebuild with a second person, then the protein swab — as consecutive steps, not a menu. The next run cannot start until the swab is clear.
